The family estate is located in Poinchy near Chablis. “Begun in 1990, we took over the 2 ha of family land and developed our vineyard to have today 18 ha of vines spread over several appellations of Chablis and Burgundy. Our wines are steeped in history handed down by the land and climates.” The minerality of the wines comes from the establishment of Chardonnay on a unique soil in the world called kimmeridgian. The soil is composed of layers of very compact limestone and very soft clay marls containing fossilized marine organisms. The harvest in boxes has also become a priority of the Domaine which consists in transporting the grapes directly from the vine to the press by a lifting belt, without any manipulation. This allows optimal respect for the bunches that remain intact until the moment of pressing. Chablis Croix aux Moines is a cuvee from rigorously selected Chablis vines. It is distinguished by its minerality and aromatic complexity. Vinification: Static settling for 24 hours. Alcoholic fermentation without the addition of yeasts then malolactic fermentation in thermoregulated stainless steel tanks for 50% of the volume, in oak barrels for the rest.
