Quinta Sardonia Sardon 2021, Castilla y Leon, Spain

A few kilometers downriver from the western border of Ribera del Duero, on gentle south-facing slopes carved over centuries by the Duero, is Quinta Sardonia. The potential of this site was recognized by Peter Sisseck and Jerome Bougnaud, who were involved in the development of Quinta Sardonia shortly before its founding in 1998. Fully biodynamic from inception and covering 17 hectares on eleven different calcareous terroirs, this ambitious project permitted Peter Sisseck to employ his years of experience in neighboring Ribera del Duero, to implement his viticultural ideals unencumbered by tradition or the decisions of generations before him. This wine is made predominantly with Tempranillo (93%), with small quantities of Garnacha, Cabernet Sauvignon and Malbec. Following the harvest, the vinification process begins with the grapes undergoing a short incubation at controlled temperatures. This is carried out with the aim of minimal extraction from the grape which allows for a fruity and aromatic character of the grapes. Sardon is then aged for 12 months, spending 6 months in French oak barrels (2nd use), followed by 6 months in stainless steel and concrete tanks. Good aromatic intensity, fresh nose of blackberries and raspberries with a touch of spice. The palate is very fruity and fresh yet also has flesh and volume. The tannins are soft and give way to a refreshing, mineral finish with good persistence. The barrel ageing shows slightly towards the end of the palate, dominated by fresh and tasty fruit.
