Château de Chamilly stands in the heart of a green valley located north of the Côte Chalonnaise, 20 minutes south of Beaune. At the beginning of the 19th century, the Desfontaine family acquired it and the land surrounding it. In love with stones and this unique living environment, the Desfontaines have never stopped restoring it and developing its surroundings. Tasting: Coming from a high climate close to the Monthelons, this Mercurey keeps fresh and dynamic even in the hottest vintages. Characteristics: Soil: clay-limestone. Exposure: East northeast. Grape Variety: Pinot Noir. Average age of the vines: 50 years. Elaboration: Manual harvesting and sorting in the vineyard, transport in small volume containers. Vinification for 12 to 19 days in temperature-controlled concrete vats with cold pre-fermentation maceration for 3 to 5 days. The vats are pumped up or punched out according to the stage of fermentation and the feeling of tasting. Aged for 18 months: 12 months in oak barrels and 6 months in vats.
