Lava Cap Cabernet Sauvignon 2022, El Dorado, California

Founded in 1981, Lava Cap Winery is a third generation family farm, located in the Sierra Foothills, at an elevation of 2,400FT-2,700ft. The winery and Estate Vineyards are located on a unique outcropping of volcanic soil, the inspiration for the wineries name. The result of elevation and distinct soils are wines that errupt with flavor. The grapes are hand-picked- hand sosrted, destemmed, and lightly broken before entering the fermenter. After a 5 day cold soak, the must underwent fermentation, never exceeding 84 degrees. During fermentation pump overs were performed twice a day to gently extract flavors and tannin. The wine was aged in 100% French barriques, undergoing 1 racking prior bottling. The wine was bottle unfiltered. Tasting notes: The nose is met with dark fruits, including plum and cassis. The rich fruit is followed by aromas of allspice and cedar. In the mouth, the tannins are mouthfilling and plush, offering a rich and distinctly long finish.
