Eric Louis, winemaker in Sancerre, has been rooted in the south-east of the Sancerre appellation for 4 generations. The Estate was founded in 1860 by their ancestor Pauline. The great-grandmother Pauline gave her name to the Estate ‘Les Celliers de la Pauline’ and also to an uncommon cuvee in Sancerre aged in acacia barrels. Here is a delicious Pinot Noir full of red fruits! Crisp and fresh, it reveals aromas of berries, raspberries and crushed strawberries. A real delicacy! This is enough to surprise friends, family and neighbours with a soft, easy-drinking, light red wine, but not too much. This Pinot Noir will be the perfect accompaniment to your pasta, barbecue and grilled dishes. “We have chosen the vinification without sulphite using the biocontrol of the fresh harvest until the end of the alcoholic fermentation. During aging in thermoregulated stainless steel vats, wine is kept in a protective nitrogen atmosphere, preventing any alteration or bacterial development with minimal use of sulphur. This inertia is maintained until bottling. Therefore, our wines contain a low dose of sulphur (total SO2) as biodynamic wines (Demeter certified).”
