Known in other regions as Pinot Gris, Fromenteau used to be very widely grown in Champagne. This champange is exclusively made from this varietal, a genetic mutation of the Pinot Noir. Assemblage: 100% Fromenteau. Base year: 2015 harvest. Parcel: Les Truchots (on Jurassic Kimmeridgian limestone soil) Tirage: May 2017. Disgorgement: May 2019, Dosage: 0 g/L. Pinot Gris, this copper-skinned grape variety, once very present in the Aube, made so-called “grey” wines. Rich, silky and full, Fromenteau, very rare today, gives a golden juice with notes of forgotten fruit. The vine, located on the terroir of Urville (Cote des Bars), is grown organically. The minerality of limestone contrasts with the almost exotic roundness of Pinot Gris. This cuvee Trop m’en Faut ! has been vinified and aged in stainless steel vats in order to preserve all the tension and freshness of the wine, without chaptalization, filtration or clarification and with natural malolactic fermentation. This cuvee has an aging of 24 months on slats and is not dosed (Brut Nature). This champagne has a pale gold color and a fine and delicate bubble. This cuvée reveals beautiful notes of ripe plum plum and the tension of the effervescence is softened by notes of acacia honey.
