Expressive wines with aromas of ripe fruit, stew, sometimes animal notes and still others of roasting. The tannins are silky, fleshy of a fabric that is both tender and strong. Wines to be tasted with “a long view” with real aging potential. The geographical location of the Domaine, open to the South and West, gives it an ideal climate for the ripening of the grapes. The vineyard of the Domaine, mostly limestone, very stony with some sandy marls and sandstone that allows us to develop harmonious wines combining power and lightness. A grape variety of fourth maturity, Mourvèdre is long overdue to express its potential and reveal its virtuosity. Mourvedre 80% – Grenache 20%. Vinification & ageing: Sorting of bunches, destemming (up to 85%) and crushing are carried out as soon as the grapes arrive at the winery. The harvest is then transported to the thermo-regulated stainless steel winery. Vatting per unit of terroir from 3 weeks to one month. The alcoholic fermentation will take place air pumping-overs, and daily punching for a better extraction of aromas, colors and tannins. After racking, the wine carries out its malolactic fermentation in barrels. Aged 18 months. Tasting: Beautiful intense garnet color with purplish refflets, bright and clear. The very expressive nose reveals with intensity all the complexity of the terroir of Bandol. The notes of very ripe black fruit, liquorice marry with the iodine notes of Mourvedre grown on calcareous soil under the benevolent eye of the nearby Mediterranean. The palate is full and complex allowing silky and velvety tannins present but without being aggressive. A nice balanced wine that will undoubtedly demonstrate a beautiful aging capacity in the cellar.
