Adelaida’s organically-certified estate vineyards are located in the coastal influenced Santa Lucia Mountain Range on the west side of the Paso Robles AVA. Situated on steep hillsides, these sites lie within the nested Adelaida and Willow Creek Districts, in the northwest corner of the wine region. With elevations ranging from (1400 – 2050 ft), limestone subsoils, and extreme diurnal temperature swings, averaging 45 degrees, Adelaida produces wines with distinct expressions of their site. A testament to the dedication Adelaida has to delivering delicious wines across all price points, and a glimpse into what is to come from our newest vineyard; Tír na nÓg. Our Paso Robles designation marries Estate grapes from our new planting in the Willow Creek District along with our proven source: Viking Vineyard in the Adelaida District. Always showing its elite Cabernet Sauvignon pedigree, the wine is unmistakably true to varietal, along with a dynamic distinctiveness that speaks of these two dramatic and high elevation, steep, vineyards. These estate vineyards produce classic Cabernet Sauvignon, full of intense and bold flavors, along with lifted, nuanced aromatics. Tannic, structured and intense, this is a Cabernets lovers’ wine from start to finish. A deep ruby hued spectrum draws you in to a wine that obviously punches above its weight. Sense of place aromatics, and perfect varietal characteristics deliver the goods through Adelaida Dust, and Willow Creek spice. The wine opens with vibrant black fruit scents that are carried on a wave of exotic and intense, incense, scents. The flavors ride a rollercoaster of plum, cherry, and single origin chocolate, whichare accented by graphite, exotic spices, cedar and oak barrel spice.
