Jean Claude Lapalu is a major proponent of orgnaic farming and simple winemaking. This wine is Gamay from 45-year-old vines, grown organically and planted on granitic soils, at the vineyard site Les Quatre Croix. Manual harvest at maturity and natural vinification, without inputs. Carbonic maceration of the whole bunches, soft pressing, fermentations and aging for seven months in barrels for that have seen several wines. Unfiltered, just a pinch of sulphur at bottling. Wine not presented to labelling authorities and intentionally classified as Vin de France.
