“This organic Cabernet Sauvignon boasts aromas of fresh fig and strawberry with hints of cranberry and a whiff of fresh tobacco leaf. Alongside bright and rich flavors of cranberriesand blueberries on the palate there is the complexity of plum, walnut, cocoa, and dusty earth, giving it a nice mouthfeel that is balanced with medium fine tannins and a slight touch of acidity. 95% Certified Organic Cabernet Sauvignon & 5% Certified Organic Merlot. All the components from this great Cabernet Sauvignon were harvested in mid to late October. We achieved optimal ripeness in the fruit during this growing season with nice cool nights to maintain acidity. All the lots were fermented in upright stainless-steel fermenters with PDM yeast. 100% malolactic fermentation was completed in upright stainless-steel tanks.” – Winery
