Located in the mountainous terrain of Paso Robles, Adelaida Vineyards & Winery is built on a vision of excellence: for wine, for community, and for the environment. Sustainable agriculture and a winemaking team guided by nature come together to create classic California wines that convey a sense of this unique place. With elevations ranging from 1400 – 2050 ft, limestone subsoils, and extreme diurnal temperature swings, averaging 45 degrees, Adelaida produces wines with distinct expressions of their site. The 2018-2019 winter brought about 24 inches of rain to Adelaida’s vineyards, which included an uncommon mid-May shower that delivered roughly one inch of rain. Bud break was seen in mid-March and led to early vine vigor and dense canopy growth throughout the year. The summer was moderate. Once the fruit arrived at the winery, grapes were hand-sorted and de-stemmed. Fermentation began utilizing indigenous yeast cultures in a combination of concrete tanks, large oak foudres, and bariques. Boasting a deep and concentrated ruby appearance, the bouquet shows classic Viking vineyard aromas with the high-toned perfume leading with violets, blackberries, and exotic baking spices. Secondary notes of graphite, cedar, and balsam wood are all
framed and lifted by oak and vanilla notes introduced through the use of high quality French barrels. This vintage delivers a decadent, full-bodied wine that is as vibrant and lively as it is rich and intense. 100% Cabernet Sauvignon, Aged in French oak barrique (55% new) for 20 months.
