Babylonstoren Cabernet Sauvignon 2021, Simonsberg-Paarl, Western Cape, South Africa

The vineyards of Babylonstoren are nestled on the slopes of the Simonsberg Mountain, just North of Stellenbosch between Paarl & Franschhoek. The name dates back to a time when a large hill on the property became a routine meeting spot for the diverse local population. It became referred to as ‘The Tower of Babel’ due to the converging of the many languages spoken in the area. The farm is owned by former magazine editor Karen Roos. The first vintage was in 2011. 2021 Cabernet Sauvignon: Grapes are picked from eight different vineyard blocks. Matured in a combination of 40% new and 60% second- and third-fill 300 litre oak barrels for 18 months before being bottled and matured for three months prior to release. Bouquet: Rich, dark berry fruit at its core and a savory edge of wild herbs, graphite and cedarwood shavings. Taste: Beautifully balanced and stylish with classic cultivar expression; the savory finish is long and satisfying.
