The Bourgogne Aligoté is made entirely from the Aligoté grape. The parcels of Bourgogne Aligoté are located mainly between Buxy and Saint-Gengoux-le-National, at the bottom of the hills. The soil is often covered with scree and rock, which allow the grapes to achieve full maturity. The grapes are grown in calcareous soil of the Côte Chalonnaise. Soil: Limestone soils of Silex. Vinification: Grapes are crushed immeadiately following harvest, leaving only the grape juice to ferment. The making of Bourgogne Aligoté takes place entirely in stainless steel vats so as to preserve its freshness and liveliness. Aging: Briefly in stainless steel. The Cave des Vignerons de Buxy was born out of the desire of the winegrowers of the Cote Chalonnaise to unite around a common project: vinifying, maturing and marketing their wines together. An epic that began over 80 years ago and has turned into an exceptional human adventure. 120 family farms cultivate this vineyard by perpetuating the actions of their fathers. The cultivation and harvesting of grapes is subject to rigorous monitoring and control. Thus, it is with a perfect knowledge of the field that a team of specialists served by modern vinification and aging techniques, can develop authentic wines, reflecting the soils of the Côte Chalonnaise and Mâconnais.
