Peirano Estate Vineyards was established in 1895, creating one of the first vineyards in Lodi. This 100% Cabernet Sauvignon came from 50-yr-old estate vines in the Lodi appellation. This labor-intensive system divides the canopy both horizontally and vertically, which exposes the fruit to increased sunlight and enhances flavor components. Drastic pruning helps guide the vine to focus its efforts to optimally ripen fewer cluster of grapes. Hand-picked fruit. Three fermentation methods – Static, Cold Soak and Rotary Fermentation. Extended maceration time allowed for maximum extraction of color and phenolics. Aged 12 months in all French oak barrels, 15% new. Racked every 3 months, topped every two wks, to achieve maximum clarity. Rich, deep burgundy hue with perfect clarity. Aromas of zesty black boysenberries, raspberries and plums. Mouth: sweet black boysenberries, raspberries, juicy fruit and baked blackberry pie.
