Meticulous vineyard management followed by minimally-invasive winemaking techniques allows Paul Hobbs Winery to produce wines that express their vineyard origins with finesse, complexity and authenticity. Winemaking: Hand-harvested, picked at night. Hand-sorted while still cold from the field; 9% whole cluster inclusion. 5-day cold soak, 14 day maceration. Fermented in small, open-top stainless steel tanks with indigenous yeasts. Gentle punchdowns. Aged 10 months in French Oak barrels; 43% new. Coopers: Cadus, Damy, Louis Latour, Francois Frères, Marques, Remond, Gauthier. Spontaneous malolactic fermentation in barrels. Unfined and unfiltered; bottled August 2019. “Sourced predominately from our estates that are defined by their proximity to the coast and Russian River climate, the wine displays vivid crimson and aromas of violet, Morello cherry, and black tea.
