Made by Ken Bernards (Ancien Winery). Elevage is the cellaring, aging and finishing of a wine. This wine is comprised of selected barrels chosen for their unique synergies. Our Rosé came from the un-pressed free-run of Pinot Noir, evidenced by its very pale color and extremely lively floral notes. This is in contrast to the more common tank “saignee” method which produces a little darker but more clumsy roses (in our opinion). We then fermented and ultimately aged the wine through July on its yeast lees – enhancing the texture and mouthfeel along the way – finally bottling in early August. This is a marked contrast to most in the market, typically going to bottle at least 6 months earlier.” – Ken Barnards
