Grape Variety: 100 % Chardonnay. Plantation density: 8 500 vines stocks/hectare. Average Vine Age: 45 years. Soil: Limestone, heavy clay from the Jurassic age, schist and sandstone. Plots: Blending of 3 different ‘Climats’, all located in Fuissé. Harvest : Hand Picked / Whole Bunches / Sor-ting table at the vineyard. Winemaking Process : Pneumatic press / Raking after 24 hours of settled down by gravity / Long fermentation at low temperature between 15 to 18 °C / 50% in Demi-Muits (500L barrels) and 50% in stainless steel tanks / Complete malolactic fermentation. Ageing : 6 to 12 months in stainless steel tanks (50%) and demi-muits 50%) / Blending before bottling.
