The Chablis vineyard is one of the oldest in France. Spread on both sides of the river “Le Serein”, the vines of the appellation extend over 17 communes. The uniqueness of the wines is given by the soil, essentially of the “Kimmeridgian” type where sediments have been deposited composed in particular of large quantities of small fossil oysters ostrea virgula. Vinification is the essential step to express all the richness and complexity of the Chablis terroirs. After the harvest, there is first the pressing, provided by the associated winegrowers. This operation is carried out as close as possible to the vines in order to guarantee an optimal quality of the musts. La Chablisienne then takes over for settling operations and alcoholic and malolactic fermentations. To preserve and reveal all the nuances and depth of Chablis wines, we have the best equipment. Fermentation and aging are done either in thermoregulated stainless steel vats or in 228-litre oak barrels for our selections of wines. 2020 Chablis Le Finage – Pale gold color, shiny. first nose quite discreet revealing notes of sweet spices. After opening, more fruity aromas appear with a slight vegetal, lemony hint. The palate is fresh with a well-balanced acidity.
