The Chablis vineyard is one of the oldest in France. Spread on both sides of the river “Le Serein”, the vines of the appellation extend over 17 communes. The uniqueness of the wines is given by the soil, essentially of the “Kimmeridgian” type where sediments have been deposited composed in particular of large quantities of small fossil oysters ostrea virgula.
