Situated near Auxerre, in the valley of the Serein River, Chablis is the center of one of France’s oldest wine growing regions. Starting from scratch, Jean-Marc planted one hectare of vines and produced his first bottles of Chablis in 1974. Today, 96 hectares surround his cellars which produce 600,000 bottles annually. Chablis wines take their world famous mineral and fresh character from the vine’s roots which dig deep into the subsoil, consisting of limestone, clay and marine fossils. At Domaine Brocard, each parcel of vineyard is harvested and vinified separately to preserve the identity of each soil type. For this reason, the wines are then stored in individual stainless steel tanks. The grape variety acts only as the means by which the subtle differences of the “terroir” can be expressed. The Brocard vineyards are proudly herbicide and pesticide free. Jean-Marc Brocard ‘s son, Julian, is an advocate of Bio-Dynamic farming. This wine is from single vineyard ‘Sainte Claire’, 30 year old vines on Kimmeridgian limestone in the Village of Préhy. The wine was fermented using native yeasts in stainless steel tanks and then aged in tank for 9 months. Malolactic fermentation completed. On the nose, notes of lemon, yellow fruits. The mouth is wrapped, balanced, and tangy.
