Chablis is located in the northern part of Burgundy, halfway between Dijon and Paris. The vineyard size is 3 225 ha. The Premier Cru vineyards represent 20% of the total size of the Burgundy Premiers Crus. The continental climate (very cold in winter and hot in the summer with frosts in spring) together with the marly limestone soils mold the unique character of Chablis wines. This juice is fermented in stainless steel tanks (50%) and in wooden barrels like all our Grands Crus from the Côte d’Or area. The wine is then aged in barrels during 15-18 months before bottling (usually about 30% new oak). Pale in color with a silvery rim. The nose is floral, with notes of honeysuckle and lime leaf. The palate is taut but shows the vintage’s typical balance of opulent ripeness and lively acidity.
