Dominio de Pingus is a Spanish winery located in Quintanilla de Onésimo in Valladolid province with vineyards in the La Horra area of the Ribera del Duero region. Soils: Limestone-rich clay and gravel. Grapes are harvested by hand. Vineyards: Barrosso, 2.5hA, age of vines 65 years. San Cristobal 1.5hA, age of vines 70 years. No fining or filtration. Minimal rackings. 100% destemming. Pingus has been Biodynamic since 2000. Fermented in large wooden vats, and once in cask, is mostly left alone. The flavors of the oak vanish into the enormous concentration. PSI – Named after the 23rd letter of the Greek alphabet. The goal for PSI is to find the soul of Ribera del Duero. There will be experimentation with winemaking as the project develops, but the primary concept is to eschew many of the modern techniques used in the region today. Long, gentle macerations to get the most harmonious extraction possible from their grapes. And a relaxed élévage in a mix of large and small oak casks and cement tanks, with virtually no new wood. The early wines are subtle, delicate, and as compelling as anything seen in modern Spain.
