Domaine Faiveley Mercurey 2018

Domaine Faiveley combines the principles of modern winemaking methods with the time honored traditions that have been practiced for centuries within their 19th century cellars. Mercurey; located in the Cote Chalonnaise is the largest appellation in all of Burgundy with over 1600 acres under vine. Domaine Faiveley’s village Mercurey is sourced from 5 parcels spread throughout the appellation for a total of 95 acres. Vines date back as far as 1962 and soils are primarily clay and limestone. In Mercurey, the orientation of the terrain from east to west between parallel hills channels the sun’s rays from sunrise to sunset, providing maximum light for Faiveley’s vineyards. The average age of the vines in 2016 was 43 years. Vines are densely spaced at 9,000 vines per hectare (3,642 vines per acre) and pruned in single Guyot. Domaine Faiveley’s vineyards are farmed sustainably. The grapes were pressed and vinified on site in Mercurey. The wine was then brought to the domaine’s cellars in Nuits-Saint-Georges for aging. The wine is aged in a combination of stainless steel and oak for 12 to 14 months prior to release.
