Vadin-Plateau Champagne is a family run enterprise in the heart of the Great Valley of the Marne, in the village of Cumières, near Épernay, the capital of Champagne. Chêne de la Butte is vintage Champagne produced from 100% Chardonnay from a single vineyard in Cumières. Chalky, discreet and pretty, it is an authentic rendition of what Blanc de Blancs Champagne should be. On the palate, it is creamy with notable density and richness indicating that despite its refinement, it has strength and power as well. This Blanc de Blancs Champagne is vinified in cement eggs where it remains for at least 9 months on the fine lees with no racking. They believe in low intervention winemaking so no fining, filtering or cold stabilization is used. Once the wine starts its 2nd fermentation in bottle, it remains on the lattes for at least 2 years (though often longer) before disgorgement. There was no dosage added at bottling.
