Drappier’s Brut Nature Rose Champagne is made with 100% Pinot Noir grapes in the saignee method, which involves bleeding off the juice after a brief contact with the Pinot Noir skins. Maceration occurs in stainless steel vats and lasts 3 days. Drappier uses the juice from the first press only to preserve the freshness in his wines. Mechanical low-pressure presses are used, and his use of gravity allows him to avoid pumping, preventing oxidation in the wine. There is minimal use of sulfur and a natural settling of the wine which aids the alcoholic and malolactic fermentation of the wine. The key is freshness to this Brut Nature Rose, and 100% of the wines are made in vats to further preserve it. After bottling, the cuvee is aged for 2 to 3 years on the lees, with zero dosage. This 100% Brut Nature Rose is aromatically expressive with notes of strawberry and raspberry, with a hint of rose petal. The palate is red fruit driven with citrus notes, mandarin orange and a subtle savory note of white pepper.
