Champagne Drappier Cuvee Clarevallis Extra Brut, Urville, France

The cuvee Clarevallis (Latin name of the abbey of Clairvaux, built by Saint Bernard) comes from grapes grown organically on the hillside of Urville already planted in Cistercian times. Clarevallis is the expression of the landscape and the land that man has maintained since the twelfth century. Assemblage: Pinot Noir 75%, Meunier 10%, Chardonnay 10%, Blanc Vrai 5%. Vinification: Jurassic Kimmeridgian limestone. Organically farmed land tilled in part with a horse. Only first press grapes used. Malolactic fermentation. Organic lees from the estate. No filtering, no discoloration. Very low sulphites. Dosage: 4 g/l. Tasting: Very fine and persistent bubbles. Notes of elderberry and violet. Limestone minerality rounded off by the pulp of Pinot Noir dominating the blend. A tension in the mouth balanced by a discreet dosage and pretty bitters. Nice complexity. It is a fresh and very delicate champagne.
