Sean Capiaux founded Capiaux Cellars in 1994, Capiaux Cellars is dedicated to producing single vineyard bottlings of Pinot Noir. The winemaking style is a blend of classic and contemporary, utilizing cutting edge fermentation equipment paired with natural hands on winemaking, our emphasis is on balance. All the wines are naturally fermented, unfined and unfiltered to preserve innate flavors and aromas. Minimal new oak is used, usually 33%. Pisoni Vineyards: An instant success, this vineyard in the Santa Lucia Highlands just south of Salinas is producing some amazing wines from an array of top Pinot Noir producers. The bud wood for the Pisoni vineyard came from a very famous vineyard in Burgundy. This vineyard is coming into its prime with age and is producing dark expansive wines with firm structure meant for aging. The 2016 Pinot Noir Pisoni Vineyard is sensual, racy and inviting. Silky tannins and a creamy palate feel yield a Pisoni of unusual finesse, which is quite remarkable for a site that in the past has tended to produce much darker and more potent wines than this. Hints of violet, lavender, spice and a dash of new oak add shades of nuance. Drinking window 2019-2026.
