Using a palette of diverse organic grapes, winemaker Jose Mendoza creates a wide array of classic varietal wines with no sulfites added. Jose’s imaginative blends result in fresh and provocative wines ~ each with a distinct heady balance of fruit, floral, spice, and earth. 2018 vintage: All the components from this great Cabernet Sauvignon were harvested in mid-October. All the lots were fermented in upright stainless-steel fermenters with PDM yeast, with 100% malolactic fermentation was completed in stainless steel tanks. 100% Certified Organic Cabernet Sauvignon. This Organic Cabernet Sauvignon boasts nice aromatics of blueberry, blackberry, that mingles with hints of tobacco and vanilla on the nose. Along with bright and rich berry flavors on the palate of focused ripe black cherry and blueberry, alongside the complexity of sweet black currant, coffee, and a touch of cocoa intertwined with a hint of spice. This leads to a nice dark fruit finish that is balanced with medium tannins and a slight touch of acidity on this very approachable Cabernet Sauvignon.
