Blue Ridge sources its raw milk from Southern Oaks Jersey Farm in Abbeville, SC: Jersey cows are known for the higher fat content of their milk. Cheese made from raw milk requires at least 6 months of aging. The Creamery uses 250 gallons of raw milk and 40 gallons of pasteurized milk a week. The whey leftover from the cheese-making process is sent to a local pig farmer. Their most popular cheeses include Jocassee Tomme, Buxton, Mont Sassafras, and Migration. Buzton Cheese – Another recipe of their own creation, this is the hardest cheese currently in production and extremely versatile in its application. With a natural, salt-brushed rind, these wheels show appropriate salinity on the palate, finishing on a note of toast or even butterscotch.
