This “old vines” Pinot Noir is produced with vines aged between 25 to 35 years old in the Côte de Beaune and Côte de Nuits areas, on clay and limestone soils. The diverse exposure and altitude of these areas allows Bichot to craft this mosaic of vineyard parcels, producing the beautiful complexity of this wine. The venerable age of the vines gives this wine a special aromatic concentration, frank and characteristic flavors. Unlike many negociant wines this one is actually vinified by Bichot, rather than assembled from market wines. The grapes are handpicked, then sorted once they arrive at the winery, and are gravity-fed into tanks. Vinification is carried out according to Burgundian tradition. Maceration and fermentation lasts for 18-25 days in conical oak vats. Daily punching of the cap is adapted to each phase of the maceration and extraction processes. During devatting, careful attention is given to pressing, which is done very gently. This wine is aged by blending stainless steel vats and oak barrels in the cellars for 8-12 months. Ageing in vats preserves freshness and the fruity characteristics of the varietal, whereas the oak barrel wine adds structure and complexity. Lovely intensive red color. Notes of black currant, red currant and plum on the nose. The mouth is fleshy and well-balanced and enhanced by discreet woody notes with a pleasant finish.
